Sakhar Bhat
Sakhar bhaat is a Goan sweet dish. It is sweet rice flavoured with dry fruits and cardamom. It is prepared for weddings and religious occasions. It is served normally as a part of the meal.
Measurement: 1 Cup = 180 ml
Ingredients:
- Basmati rice – 1 cup
- Sugar – 1 cup
- Water – 2 1/2 cups approx
- Cashew nuts and raisins – as per your requirement
- Almonds (blanched, peeled and shredded) – as per your requirement
- Cloves – 4 to 5
- Cardamoms (powdered) – 2 to 3
- Saffron strands – a pinch soaked in 1 tbsp milk
- Saffron colour – a pinch
- Salt – a pinch (optional)
- Pure ghee – 1 1/2 to 2 tbsp
Procedure
- Wash rice and keep it aside for 15 mins.
- Heat ghee in a pan and add cloves.
- Add rice and stir fry for 5-7 mins.
- Add dry fruits.
- Boil water with saffron and colour.
- Add boiling water to the rice, cover it with a lid and cook on low flame till rice is cooked.
- If you feel rice is not well cooked, then add little more hot water.
- Let it remain covered for 5 mins.
- Add sugar to the well cooked rice and mix well.
- Cover it and cook for 2-3 mins and let it stand for sometime as, the melted sugar is to be absorbed.
- Check after 10 mins. Add cardamom powder.
- Serve hot.
