Brinjal Raita (Vangi Raita)
Brinjal Raita or Vangi Raita can also be callled vangi bharit. It is a Maharashtrian side dish.
Ingredients:
- Brinjal – 1 medium
- Onion (finely chopped) – 1 small
- Green chillies (chopped) – 2
- Coriander leaves (chopped) – 1 tsp
- Roasted peanut powder – 1 1/2 tbsp
- Sugar – 1/2 to 1 tsp
- Salt to taste
- Oil/ ghee – 1 tsp
- Jeera – 1/4 tsp
- Mustard seeds – 1/4 tsp
- Hing – just a pinch
- Curd – 3 – 4 tbsp.
- Roast and peel the brinjal.
- Mash it.
- Take a mixing bowl and add all the ingredients numbering 2 to 7 to the mashed brinjal.
- Give it a tempering of ingredients numbering 8 to 11.
- Mix well.
- At the time of serving add curd.
