Kanda Pohe
Ingredients:
- Onion (chopped) – 2 medium
- Poha (Rice flakes) – 3 1/2 cups
- Green chillies (chopped) – 2 to 3
- Soaked peanuts – 2 tbsp
- Curry leaves – 5 to 6
- Mustard seeds – 1/4 tsp
- Cumin powder – 1/4 tsp
- Turmeric powder – 1/4 tsp
- Scrapped coconut – 2 tbsp
- Coriander leaves (chopped) – 1 tbsp
- Oil – 4 tbsp
- Sugar – a pinch
- Salt to taste
- Lemon wedges for serving
- Heat oil in a wok and add mustard seeds.
- Add curry leaves and onion, stir fry for half a minute.
- Add peanuts and stir fry.
- Sprinkle little salt and cook it covered on low flame till onion turn soft (for 4-5 minutes).
- In the meanwhile, wash poha and drain.
- Sprinkle turmeric powder, cumin powder, sugar and salt over poha; mix well.
- Add green chillies to onion and stir fry for half a minute.
- Add poha and mix well.
- Keep it covered on low flame for 2 min.
- Garnish with scrapped coconut and coriander.
- Serve hot accompanied by a lemon wedge.
- Tip:
- You may stir fry potato as well along with onion.
- Fresh peas also can be added, but avoid peanuts then.
