Vaangi Batata Rassa

Ingredients
Baby Brinjal (cubed)- 4 – 5 Potato (peeled & cubed) – 2 – 3 medium Roasted peanut powder – 1.5 to 2 tbsp Mustard seeds – 1/3 tsp Hing – 1/4 tsp Turmeric powder – 1/8 tsp Goda masala – 1.5 tsp Chilly powder – 1/3 tsp Tamarind pulp – 1.5 to 2 tbsp Jaggery (grated) – 1 to 1.5 tbsp Oil – 1 tbsp Salt to taste
Procedure
Heat oil in a pan and add mustard seeds. Once mustard seeds splutter, add hing turmeric powder, goda masala and chilly powder. Add brinjal and potatoes, mix well. Add water and salt. Cook it covered or uncovered. When potatoes are about to get cooked, add tamarind pulp, jaggery and roasted peanut powder. Simmer. Serve hot with chapatis.
Tip
You may use garam masala, if you don’t have goda masala. You may use onion too in the preparation.
