Goan Samosa
Samosa is a deep fried snack with a filling of potatoes, onion and peas. Goan samosas are prepared by using pattis for the covering. Pattis are usually prepared in the cafe itself. They can be prepared at home by making a firm dough from maida, rolling the dough like puri / roti, then slightly warming it and later stuff it and then deep fry. Readymade pattis are also available in supermarkets. These Goan samosas are available in every Goan local cafes. These can be served with ketchup or chutney for breakfast or as an evening tea time snacks. Here goes the recipe.
Ingredients
For Stuffing
- Potatoes – 4 medium size
- Onion – 2 medium
- White peas (boiled) – 1/4 cup
- Green chillies (chopped) – 2
- Ginger ( grated) – 1/4 tsp
- Garlic (crushed) – 4 cloves
- Mustard seeds – 1 pinch (optional)
- Turmeric powder – 1/3 tsp
- Garam masala – 1/4 tsp (optional)
- Coriander leaves (chopped) – 1 tbsp
- Oil for stuffing – 2 1/2 tbsp
- Salt to taste
For Covering
- Maida – 1 1/2 cup + 1/3 cup for dusting
- Sooji – 1 1/2 tbsp
- Baking soda – a pinch
- Salt – 1/2 tsp approx.
- Hot oil – 2 tsp
- Water – 1/2 cup approx.
For Frying
- Oil for deep frying
- Maida paste for sealing (combine 1 tbsp maida with little water)
Procedure
For Covering
- Combine all the dry ingredients in a mixing bowl.
- Pour hot oil over it.
- Slowly add water and knead the dough. Make a firm dough and let it rest till the stuffing is ready.
- Divide the dough into 12 to 14 balls of equal size.
- Dust the balls and roll them into thin circles like puris (one by one).
- Heat a nonstick pan till medium hot, place these circles and warm them slightly.
For Stuffing
- Boil potatoes with salt and let them cool. Peel them and cut into cubes.
- Heat oil in a pan and add mustard seeds.
- Add onion and stir fry till onion softens.
- Add green chillies, ginger, garlic, garam masala, turmeric powder and stir fry for half a minute.
- Sprinkle little salt.
- Add potatoes, peas, coriander and salt.
- Mix well and keep it on low flame for 2 min.
- Let it cool slightly.
For Frying
- Take the heated dough circles and fill them one by one.
- Seal with maida flour paste.
- Deep fry on low flame and serve hot with tomato ketchup
Tip
- You may add carrots too in filling preparation.
- These wrappers are available in super stores/ hyper markets where frozen foods are available.
