Veg Green Pulav
Ingredients:
- Basmati Rice – 1 cup
- Onion (sliced) – 2 medium size
- Carrot (julienned) – 1/2 cup
- French beans (shredded) – 1/2 cup
- Cauliflower florets – 7-8 medium size
- Fresh Peas – 1/4 cup
- Cloves – 5-7
- Cinnamon – 1″ 2 pieces
- Green Cardamom – 2 / Black Cardamom – 1
- Peppercorns – 5-6
- Bayleaf -1
- Green chillies – 2
- Garlic cloves – 8-10
- Ginger – 4-5 slices
- Corriander leaves – handful
- Mint leaves – 6-8 (optional)
- Oil – 2 tbsp
- Water – 2.5 cups
- Salt to taste
Procedure:
- Wash rice and keep it aside for 15 minutes.
- Heat oil in a pressure cooker and add spices numbering 7 to 11.
- Add onion and fry till it turns golden brown.
- Add rice and peas.
- Stir fry for sometime, add vegetables and stir fry for 2 min.
- Grind ingredients numbering 12 to 16 by adding little water.
- Add water and the paste to rice.
- Add salt to taste.
- Pressure cook till 2 whistles.
- Serve hot.
