Cajun Potatoes
This dish is loved by most of the people who visit BBQ Nation restaurant.
Serves: 3
Ingredients:
- Baby potatoes – 300 gm approx.
- Eggless mayonnaise – 6 tbsp
- Onion powder – 1/2 tsp
- Garlic powder – 1/2 tsp
- Red chilly powder – 1/2 tsp
- Pepper powder – 1/4 tsp
- Oregano – 1/4 tsp
- Onion (chopped) – 1 small
- Coriander leaves/ spring onion greens (chopped) – for garnishing
- Corn flour – 1 tbsp
- Oil for deep frying
- Salt to taste
Procedure:
- Wash potatoes and boil them by adding salt.
- Drain and let them cool.
- Press them slightly with your palms.
- Sprinkle corn starch over them.
- Deep fry on medium to high flame till they turn crispy.
- Combine remaining ingredients and mix well except corriander leaves.
- Place the potatoes on a serving dish and drizzle the dressing on top.
- Garnish with coriander leaves.
- Serve as an appetizer.
Tip:
- You may use cajun spice mix, which is readily available in super stores.
- If mayonnaise is not sweet, then add little bit of sugar.
- You may bake them, instead of frying.
