Paneer Jalfrezi

Paneer jalfrezi is a popular dish in North Indian restaurants. Actually, jalfrezi involves frying of vegetables and spices to produce a dry thick sauce. It is a medium spicy tomato based curry with paneer (cottage cheese).
Serves: 3
Ingredients:
- Paneer – 200 to 250 gm
- Onion – 2 medium
- Capsicum / bell pepper – 1
- Tomato – 1 medium
- Carrot – 1 medium
- Ginger (grated) – 1 tsp
- Tomato puree (ready made) – 2 tbsp
- Green chilly (slit) – 1 to 2
- Cumin seeds – 1/4 tsp
- Turmeric powder – 1/4 tsp
- Kashmiri mirchi powder – 1/3 tsp
- Chilly powder – 1/4 tsp
- Corriander powder – 1/2 tsp
- Cumin powder – 1/2 tsp
- Garam masala – 1/2 tsp
- Kitchen king masala – 1/2 tsp
- Sugar – 1/3 tsp
- Kasuri methi – 1/3 tsp
- Oil – 1 1/2 tbsp
- Corriander leaves – for garnishing
- Salt to taste
Procedure:
- Cut paneer and all the vegetables into long strips.
- Steam the carrot and keep aside.
- Heat oil in a pan and add cumin seeds.
- Add onion and stir fry till onion turns soft.
- Add capsicum and ginger, stir fry for a min.
- Add ingredients numbering 9 to 15, stir fry.
- Add tomato and stir fry for a min.
- Add green chilly and tomato puree, mix well.
- Add carrots, paneer, kasuri methi, sugar and salt. Mix gently.
- Add 1/4 cup water and simmer for 2 min.
- Garnish with corriander leaves.
- Serve with roti, paratha etc
