Matki Usal (No Onion No Garlic)
Measurement: 1 Cup = 180 ml
Serves: 3
Ingredients:
- Matki – 1/3 cup
- Peanuts – 1 1/2 tbsp
- Goda masala – 1 tsp
- Mustard seeds – 1/4 tsp
- Cumin seeds – 1/4 tsp
- Hing – 1/4 tsp
- Turmeric powder – 1/4 tsp
- Chilly powder – 1/3 tsp
- Jaggery (grated)- 1 1/2 tbsp
- Tamarind pulp – 2 tsp
- Coconut (scrapped) – 1/3 cup
- Roasted peanut powder – 1 tbsp
- Oil – 2 tsp
- Corriander leaves (chopped) – for garnishing
- Salt to taste
Procedure:
- Wash and soak matki for at least 6 to 7 hrs or overnight.
- Drain, tie it in a muslin cloth and hang for 8 to 10 hrs for sprouting.
- Coarsely grind coconut without water and keep aside.
- Heat oil in a pressure cooker.
- Add mustard seeds, cumin seeds, hing, goda masala, turmeric powder and chilly powder.
- Add matki, peanuts, peanut powder and ground coconut, mix well.
- Add 1 1/4 cup of water or as per your requirement.
- Add jaggery, tamarind pulp and salt. Stir well.
- Pressure cook till 2 whistles.
- Transfer it to the serving bowl and garnish with corriander leaves.
- Serve with chapati or Masale Bhat or with dal and steamed rice.
