Puri

Puri is a deep fried Indian bread. It is served with any curry or it is an accompaniment to the sweet dishes like
aamras, shrikhand or basundi. It is made from whole wheat flour and maida or just whole wheat flour. It can be served for breakfast, evening snacks or as a part of a heavy meal, which is prepared for auspicious occasions.
Measurement: 1 cup = 180 ml

Ingredients:
- Whole wheat flour – 1 1/2 cup
- Maida – 1 1/4 cup approx + for dusting
- Sugar – a pinch
- Oil – 1 tbsp + for deep frying
- Salt to taste
- Water – 1 cup
Procedure:
- Take water in a mixing bowl, add salt and sugar to it.
- Add whole wheat flour, add 1 cup maida and start kneading.
- Add oil and remaining maida if required.
- Cover it and rest it for 15 min.
- Knead it again and divide it into 20 balls of equal size.
- Dust the ball with maida, place it on the rolling board and roll it with the help of a rolling pin into a circle of 3″ diameter.
- Repeat for remaining balls.
- Heat oil in a deep frying pan, check whether it is perfectly hot by dropping a small ball of dough.
- Drop the puri one at a time and deep fry on both sides till golden brown. Use a slotted spoon for taking them out.
- Serve hot.
