Tandla Pithachi Kheer (Rice Flour Pudding)
Tandla Pithachi Kheer is an easy to make sweet dish prepared in Goan style. Rice flour mixed with sugar and milk, flavoured with turmeric leaves or cardamom and dry fruits.
I never had this kheer until my marriage. I learnt to make this from my mother-in-law. It was prepared for some religious occasion at our place. She had told, it is a substitute for payas.
I loved it so much, more than payas. Here goes the recipe for the same.
Measurement: 1 cup = 180 ml
Serves: 4
Ingredients
- Rice flour – 4 tbsp
- Milk – 500 ml
- Sugar – 4 to 5 tbsp
- Turmeric leaves – 2
- Nuts and raisins – as per your requirement (optional)
Procedure
- Combine rice flour with 1/2 to 3/4 cup of milk and make a smooth paste keep aside.
- Boil remaining milk in a thick bottomed pan.
- Add sugar, nuts, raisins and rice flour paste to the boiling milk.
- Lower the flame and stir continuously till it thickens.
- Add turmeric leaves and stir for half a minute. (Add cardamom powder, if you don’t have turmeric leaves)
- Serve hot / at room temperature / chilled.
