Rose & Basil Seeds (Sabja) Pudding
Milk and agar agar based dessert flavoured with rose syrup and basil seeds.

Ingredients
- Milk – 500 ml
- China grass strands (Agar – Agar) – 6 gm or 2/3 pack
- Rose syrup – 8 to 10 tbsp
- Basil seeds (sabja) – 1 tbsp
- Corn flour – 1 tbsp
- Water – 125 ml + 175 ml
Procedure
- Cut china grass into small pieces. Soak in 125 ml water for about 30 to 45 mins.
- Soak basil seeds simultaneously in 175 ml water.
- Dissolve corn flour in 1/4 cup milk and keep it aside.
- Boil remaining milk.
- Simultaneously, boil china grass mixture on medium flame till it dissolves completely. Stir it. Strain it through a steel strainer. (Clean the strainer immediately)
- Add corn flour mixture & china grass mixture to the milk and stir well. Boil for 2 min, stir continuously. Don’t boil for too long.
- Add rose syrup and stir well.
- Drain excess of water if any in basil seeds.
- Take 5 dessert bowls or small glasses.
- Pour soaked basil seeds into them equally.
- Pour the milk and china grass mixture equally.
- Let it cool.
- Refrigerate for at least 2-3 hrs.
- Serve chilled.
Note:
- Rose syrup is readily available in super markets. Mapros or Malas’s brand.
- 2 to 4 drops of rose essence can also be added. Adjust the quantity of rose syrup as per your requirement.
