Goan Samaar (Basic Spice Powder)
Goan Samaar is the basic spice mix used in Saraswat cuisine.
Ingredients:
- Coriander seeds – 10 to 11 tsp
- Peppercorns – 1 tsp
- Red chillies – 3 to 4
- Cloves – 2 to 4
- Cinnamon – a tiny piece
- Cumin seeds – a pinch
- White peas – 5 (optional)
Procedure:
- Dry roast all the ingredients.
- Let them cool and grind to a fine powder.
- Use it in certain Goan dishes like dal kanyacho ros, dangar etc.
Tip:
- You may add some other spices also as per your choice.
- It can be prepared in larger quantity and stored in a glass jar.
