Red Coconut Chutney
Red Coconut Chutney is an accompaniment to the South Indian snacks.
Measurement : 1 Cup = 180 ml
Serves: 3 to 4
Ingredients:
- Scrapped coconut – 1 1/4 cup
- Onion (chopped) – 2 tbsp
- Garlic Cloves – 6 – 8
- Ginger (chopped) – 1/3 tsp
- Kashmiri mirchi – 1
- Byadgi mirchi – 1-2
- Chana dal – 1 tsp
- Coconut oil – 1 tsp
- Tamarind -a small ball
- Salt to taste
Procedure:
- Heat oil in tempering pan and add chana dal to it.
- Slightly fry chana dal and add onion.
- Fry onion till translucent and add red chillies, ginger and garlic.
- Stir fry for 5 to 10 seconds.
- Grind all the ingredients by adding 1/2 cup water to a smooth paste.
- Serve with idli/ dosa/ uttapam/ appe.
