Rosaantale Fov (रोसांतले फोव)
Rosaantale Fov is a Goan sweet dish prepared for Diwali celebration. ‘Ros’ refers to nallacho ros i.e. coconut milk and ‘fov’ means rice flakes/ beaten rice/ poha. It is basically rice flakes cooked with coconut milk sweetened with jaggery and flavoured with turmeric leaves or cardamom powder.
Variety of rice flakes dishes are prepared for Diwali in Goa. Traditionally, these are prepared from red rice flakes (these are organic) – a local produce. In my childhood, I never liked this dish. I always loved to have dudatle fov and that too chilled. Over a period of time, person’s tastes and preferences change, so are mine. I developed a liking for rosette fov and here goes the recipe.
Measurement: 1 Cup = 180 ml
Serves: 3 to 4
Ingredients
- Red rice flakes – 1 to 1 1/4 cup
- Jaggery – 1/2 cup
- Coconut (scrapped) – 1 1/2 cup
- Turmeric leaves – 2 to 3 OR Green cardamoms (powdered) – 2 to 3
- Salt to taste (1/4 tsp approx)
- Water – 2 1/4 cups
Procedure
- Wash red rice flakes thoroughly and keep aside for 10 min. Sprinkle salt over it.
- Grind coconut with 3/4 cup of water. With the help of a strainer, extract the milk (thick milk). Grind the residue with remaining water and strain it (thin milk).
- Combine jaggery with thin coconut milk in a thick bottomed pan, bring this mixture to boil.
- Add turmeric leaves.
- Add soaked red rice flakes.
- Simmer for 5 min, stir occasionally. (If you feel mixture is getting dried, then add thick coconut milk immediately)
- Add thick coconut milk. Simmer for a minute or two.
- Let it rest for sometime. (It thicken after it rests)
- Serve hot / at room temperature / cold.
Tip
If you want the consistency to be thin, then add more coconut milk.
