Kaddu Ki Kheer / Bottle gourd Pudding
Kaddu ki kheer is an Indian milky dessert. Grated Kaddu (bottle gourd) is cooked with milk along with sago, sweetened with sugar and flavoured with nuts and cardamom. When you choose the kaddu, see that it is tender. If the kaddu is not tender, you need to discard the seeds and then grate it. The kaddu is cooked with water, but for a change I have sauteed it in ghee. You can prepare it using full cream milk or low fat milk. It is usually flavoured simply with cardamom, but I have used rose essence as well. Here goes the recipe:
Measurement: 1 Cup = 180 ml
Serves: 6 to 8
Ingredients
- Kaddu (bottle gourd) – 350 to 400 gm approx
- Milk – 1 ltr
- Sabudana (sago) – 1/3 cup
- Condensed milk – 200 gm
- Sugar – 3/4 to 1 cup approx
- Cardamom (powdered) – 3 to 4
- Cashew nuts and almonds (chopped) – as per your requirement
- Pure ghee – 1 tbsp (optional)
- Rose essence – 3 to 5 drops (optional)
- Green colour – few drops (optional)
Procedure
- Wash and soak sabudana in little water for 1 1/2 hr. (sabudana should be covered under water)
- Take a thick bottomed pan and boil milk. After boiling, lower the flame and let it simmer for 10 min. Stir occasionally.
- In the meantime, wash and peel the ‘kaddu’. Grate it and discard the stock.
- Take another thick bottomed pan or kadai. Melt ghee and add grated kaddu. Saute it till raw smell goes away. Now, Add 2 cups of water and let the kaddu get cooked. (you may avoid sauteeing and simply cook it in water, but more quantity of water will be needed)
- While cooking kaddu, add soaked sabudana and stir well.
- When the mixture is almost getting dried, add 3/4 h cup sugar.
- Add half the quantity of milk and stir well. Let it simmer for 5 to 10 min. Stir occasionally.
- Add cashew nuts and almonds.
- Now, add half the quantity of remaining milk. In another 3 to 4 min, add remaining milk. Let it simmer for 2 to 3 min. Stir occasionally.
- Add condensed milk and simmer for 5 min. Stir occasionally.
- Add rose essence and stir well.
- Check the taste for sweetness and add more sugar if needed.
- Put off the flame and add cardamom powder and green colour.
- You may serve it hot or chilled. After cooling it will thicken.
