Serradura (Sawdust Pudding)

Serradura is a popular Portuguese dessert. It is also called sawdust pudding. Crushed biscuits resemble sawdust and hence sawdust pudding. It does not require too many ingredients. Alternate layers of crushed biscuits and whipped cream with condensed milk flavoured with vanilla essence are placed in a bowl. It is to be chilled and served.
Here goes the recipe.
Serves: 3 to 4
Ingredients:
- Marie biscuits – 12 to 14
- Whipping cream – 200 ml
- Condensed milk – 6 tbsp
- Vanilla essence – 1/2 tsp
- Chocolate shavings – for garnishing (optional)
Procedure:
- Finely crush the biscuits by using a dry grinder.
- Refrigerate whipping cream for for 12 hrs and pre cool the mixing bowl.
- Whip the cream with the help of an electric beater on medium to high speed. It might take 10 to 12 min approx.
- When the cream is about to form peaks, add condensed milk and vanilla essence. Whisk further till you get peaks. Add more condensed milk or sugar, if you want it to be sweeter.
- Take a dessert bowl and place one layer of whipped cream mixture, then one layer of biscuits. Repeat the layers. Let the final layer be of cream. Repeat for remaining bowls.
- Sprinkle little quantity of crushed biscuits on top.
- Garnish with chocolate shavings.
- Cover with a cling film and refrigerate for 6 hrs.
- Serve chilled.
