Broccoli Potato Soup
Measurement: 1 Cup = 180 ml
Serves: 3 to 4
Ingredients:
- Broccoli (florets) – 3 cups
- Onion (chopped) – 1 small size
- Potato (chopped) – 1 medium size
- Butter – 1 tsp
- Fresh cream – 3 tbsp
- Maida – 1 tsp (optional)
- Pepper powder – a pinch
- Water – 5 cups
- Salt to taste
Procedure:
- Melt butter in a saucepan.
- Add onion and stir fry till translucent.
- Add broccoli and potato, stir fry for half a min.
- Add 2 1/2 cups of water and cook on high flame. (Uncovered)
- Once it gets cooked, let it cool and blend it by adding maida.
- Pour the blended soup into the saucepan.
- Add remaining water and bring it to boil.
- Add fresh cream and simmer for a min.
- Sprinkle pepper powder.
- Serve hot with garlic bread.
