Tomato Coconut Chutney
Tomato coconut chutney is prepared from stir fried tomato and onion ground with with coconut and spices.
Measurement: 1 Cup = 180 ml
Serves: 3
Ingredients:
- Tomato (chopped)- 1/2 cup
- Coconut (scrapped) – 2/3 cup
- Onion (diced) – 1 small
- Chana dal – 2 tsp
- Ginger – 3 slices
- Garlic – 6 to 8 cloves
- Cumin seeds -1/8 tsp
- Tamarind – a tiny piece
- Red chillies (broken) – 2 or as per your requirement
- Oil – 2 tsp
- Sugar – 1/4 tsp
- Salt to taste
- Oil – 1 tsp
- Mustard seeds – 1/3 tsp
- Curry leaves – 5 to 6
Procedure:
- Heat oil in a pan and add chana dal, fry till chana dal turns golden brown. Take out.
- Add onion and stir fry for a min.
- Add red chillies, ginger and garlic, stir fry for a few seconds.
- Combine all the ingredients and grind to a fine taste. Add water if required.
- Transfer it to the serving bowl.
- Heat oil in a tempering pan, mustard seeds and curry leaves.
- Pour the tempering over chutney.
- Serve with any type of dosa.
