Vangi Bharit
Vangi Bharit is brinjal mash. It is a Maharashtrian side dish.
Measurement: 1 cup = 180 ml
Serves: 2 to 4
Ingredients:
- Brinjal – 1
- Onion (chopped) – 1 medium
- Roasted peanut powder – 1/2 cup (optional)
- Green chillies (chopped) – 2
- Garlic (choppped) – 4 to 5 cloves
- Mustard seeds – 1/4 tsp
- Cumin seeds – 1/4 tsp
- Curry leaes – 5-6
- Hing – 1 a pinch
- Turmeric powder – 1/4 tsp
- Oil – 1 tbsp
- Sugar – 1/3 tsp
- Salt to taste
- Corriander leaves – for garnishing
- Wash brinjal and apply 2 drops of oil to it.
- Roast it on direct gas flame on all sides till charred.
- Pierce it with a fork or knife to check whether cooked.
- Immerse it in cold water for easy removal of the skin.
- Mash it.
- Combine mashed brinjal, peanut powder, salt and sugar.
- Heat oil in a pan add mustard seeds, cumin seeds, curry leaves, garlic, green chillies, hing and turmeric powder.
- Add onion and stir fry for a min.
- Add mashed brinjal mixture and mix well.
- Cook for a min.
- Garnish with corriander leaves.
- Serve with jowar bhakri / chapati / phulka or with dal and rice.
