Sheer Khurma
Sheer Khurma or Sheer Khorma means milk with dates (as per wikipedia). It is a Muslim breakfast and dessert prepared for festival celebration. The preparation is similar to seviya kheer.
Measurement: 1 Cup = 180 ml
Serves: 4
Ingredients:
- Vermicelli (seviya) – 1/2 cup
- Whole milk – 750 ml (650 ml + 100 ml)
- Sugar – 1/3 to 1/2 cup
- Pure ghee – 2 tbsp
- Dry Dates (deseeded and chopped) – 6 to 8
- Almonds, cashew nuts, pistachios and raisins – as per your requirement
- Chironji (charoli) – 1 tsp
- Saffron strands – a few
- Cardamom (powdered) – 2
- Rose water or rose essence – 2 to 3 drops
- Soak dates in 100 ml warm milk.
- Soak saffron in a tbsp of milk.
- Keep remaining milk for boiling and simmer for 5 to 6 min so as to reduce it. Stir occasionally.
- In the meantime, heat ghee in a pan and fry ingredients numbering 6 and 7, keep aside.
- Stir fry vermicelli in the same ghee till golden brown.
- Add reduced milk to it and simmer. Stir occasionally.
- When vermicelli are about to get cooked, add dates with milk, saffron and half of the dry fruits. Stir well and simmer for 2 min.
- Add sugar and simmer for another 2 to 3 min.
- Add rose water/rose essence, put off the flame and add cardamom powder.
- Garnish with remaining dry fruits.
- Serve warm or chilled.
- It thickens after 1/2 an hr from preparation.
- If you want a runny consistency, then add more milk.
